A ring-mod (also called balanced modulator) works using amplitude modulation. It multiplies two signals (a carrier and a modulator) together to produce sum and difference tones. So if your carrier has a frequency of 100 Hz, and your modulator has a frequency of 400 Hz, you'll get sidebands at 300 Hz ...

I've used a (decent) pair of Oktavas for orchestral recording on many occasions. I got pretty good results in X/Y and ORTF (the position depends on the room). The Shures are probably also quite good, although I haven't tried them myself. If I had the cash, I'd love to try Schoeps, B&K, or Josephson ...
