Oh, people!

You HAVE to try this sauce! There is nothing like it.

It favors flavor over heat but still has quite a kick.

Melinda's Garlic Hot Sauce

Sadly, it's not always available in stores.

A friend of mine used to call the hottest gimmick hot sauces "stockbroker sauces" because it was all about the flash but didn't actually taste very good.

Sriracha is primal hot sauce. The ur-sauce. With a bit of ingenuity and tolerance for slight chunkiness most other red pepper hot sauces can be made with sriracha as the primary ingredient. Vinegar-based liquid sauces are a staple, but I can live without any of them. I can't live without sriracha.

Otherwise, find out where the Portuguese people live in your town, go to their neighbourhood, and pick up some piri piri. If you make nice to kindly old immigrants they'll probably give or sell you a jar of their homemade stuff, but even the piri piri that comes in a bottle in the store is enough to make you set the tabasco aside like it was the Estado Novo and have a Carnation Revolution right there in your fucking spice cabinet.

West Africans make piri piri too. I have no idea if it's the same, as I love West Africans but hate their food.

It's pretty crappy olive oil with some (usually) funny-tasting heat to it. Meh.

Sriracha. I put it on almost everything I eat.

If for some reason I don't have Sriracha, I will use Tapatio.
