I would go with some CCR, There's all kinds of beats, and most aren't too hard.

Also, The Cult "Electric" is full of rockin out songs that are a blast to play.

My Black Ass is great but there's a section in it where I can't quite get the toms right. The Admiral is fun though. As are Dog and Pony Show and Song of the Minerals.

Today I stuck on a couple of Pixies albums. Pretty simple but they cover most of the basics.
