Madlib/Jaylib stuff...
Tes "X2" on Lex Records.
Anything from MF Doom, but I'll mainly recommend King Geedorah "Take me to your leader" and Madvillain.
Jehru the Damaja "Wrath of the Math"
Nobody mentionned Gangstarr, any of their records are just amazing....even the Best Of double album.
Mr Lif, Cannibal Ox, El-P.
Company Flow are really good too.
Oddatee
Sage Francis, Ill Bill, Necro is really sick but very good.

And to change a bit, if you don't really mind the language, try to find the TTC album called "Batards Sensibles".....very good french hip hop.
French hip hop is probably unknown in the US, most of it is shit, but some bands have their own kind of sound and a very cool approach to hip hop. If you find it, try Le Klub des Looser, too.

Many, many excellent suggestions so far, it seems you're in safe hands and not going to go too far wrong here.

Further to that I'll chip in with an oddball gem - Quasimoto's The Unseen. Madlib's helium voiced alter-ego. It might take a few plays to get past the weed hazed, pitched-up vocals and unravel the tracks (each is like 3 or 4 rolled into one) but it's a dense, sprawling masterpiece that really hangs together as a whole. It's frequently as funny as hell too. It's such a one-off that I'm slightly dreading the new one (due any day now) which is bound to be a bit of a let-down next to it.

What about Cage - Hell's Winter? I've been following this guy's output since his pre-Eminem-beef days. The original "don't-give-a-fuck" white rapper. He apparently quit smoking dust and put this record out on Def Jux.

Jello Biafra and DJ Shadow are featured on one song, and one guy from Yo La Tengo plays bass on another. Just curious if any of you were into it.
