Spanish is way more of a consistent language than English.
That being said..
Why is it “buenos días” - not “buenas”? And why is it “buenas tardes/noches”?
I should probably not worry and just finish my burrito.

Yeah, some of those surprisingly gendered nouns make sense next to an article. For example "El agua" is easier to pronounce and hear clearly than "la agua" where the sounds run together. Probably most of it is weird etiology and latin lineage.
At any rate some of those are in the handful of reasons no one ever mistook me for a native speaker even when I was at my sharpest. Some of them I never seem to remember.

Whenever I hear or read "buenas noches" I'm suddenly reminded of one of my favorite Looney Tunes moments, which some hero graciously isolated on YouTube for my pleasure.

Chicken or the egg:
Some people with speech impediments' mouths look distinctly different when they speak. Is it because they're doing different things with their mouth which cause the differently formed sound, or do they have a different mouth shape which causes the impediment? Posture or physique?
