77Pozole is a top tier dish. I might lean towards a legit tx chili if I’m going all day w/ the dried peppers but you still can’t beat pozole really.
My pozole trick is to get herbs, lime, noodled and such and use the left overs for a culturally insensitive bun bo hue, except every Nguyen I’ve run the idea across enthusiastically approved.
