Going to Turkey (Istanbul) in March for vacation. Anybody have any travel advice?

Myself and my wife spent a week in Bodrum last year. Because it's a resort town, it's very anglo-ified (is that a new word I just utilized? Who knows!) and not exactly representative of the real Turkey.
Anyway, the trips we took out into the more remote parts were great. It's a beautiful country. I wish we had gone to Istanbul also, but we didn't utiliize our time very well...
It's also a vegetarian heaven. Be sure to try pide and apple tea (well, you won't be able to avoid it) and some mezzes. They also make amazing breakfasts (super ripe tomatoes, olives, feta cheese, honey and bread, so damn good) and "mezzes" (appetizers).

Do not buy a rug unless you've done your research ahead of time.
I was in the Aegean coastal area: ephesus, pumakalae, down to Olympos, can't remember all the other place names I visited. This area was interesting but I can't say if its #1 top destination because I didn't go anywhere else. I will say that I loved the country, the people were unbelievably cool, and their modern culture was very fascinating to me. For a Muslim country I think this place is pretty laid back, when I heard the calls to prayer I don't recall seeing anyone running off to the Mosque, ever.
